White chocolate Mint Mousse

Tip ~ When using white chocolate treat it gently, don't over heat it otherwise it might become 'grainy'.
Ingredients
250g white chocolate, broken into small pieces
250ml double cream
1 egg white
¼ teaspoon peppermint extract
6 fresh mint leaves - optional
Method
- Put the pieces of white chocolate in a heat proof bowl, and sit this bowl over a pan of simmering water until the chocolate melts, stirring gently with a spatula every now and then.
- When it is melted, allow to cool.
- In another bowl, use an electric hand mixer, whip the cream, egg white and peppermint extract together. You want a softly peaking rather than stiff mixture.
- Put a big dollop of cream onto the slightly cooled chocolate and mix in and then gently fold this chocolate mixture into the cream.
- Divide the mixture between 6 small glasses (with a capacity of 60ml each).
- Chill in the fridge and serve decorated with a mint leaf if using.
